SOURDOUGH SCORING TIPS

If you want to learn how to score your sourdough and create beautiful designs to elevate your bread, here are five tips to help with your sourdough scoring!

1. cold proof THE DOUGH.

Allow dough to COLD PROOF before scoring, this will cause the sourdough loaf to become firm which will allow for easier scoring. 

2. USE A BREAD LAMÈ.

Make sure to use a BREAD LAME when scoring, this will allow you to make precise surface cuts, as the blade of the bread lame is thinner than that of a knife or razor.

3. USE HOT WATER.

Dip the bread lame in HOT WATER before scoring, this will allow the bread lame to glide more easily into and through the dough when scoring. 

4. DUST WITH FLOUR.

Dust the loaf with FLOUR before scoring, this will help in being able to see the pretty design and beautiful scoring after baking. 

5. MAKE A DEEP SCORE.

Always make one DEEP SCORE to allow for expansion, this will allow you to control where the air and gases to escape from the loaf when baking.
