Ingredients  

The Best Sourdough Pancakes :

  • 1 c. all-purpose flour
  • 3 tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 c. sourdough discard
  • 1 1/4 c. milk
  • 1/4 c. butter melted
  • 2 tsp. vanilla
  • 2 eggs

Optional Pancake Toppings :

  • butter, maple syrup, honey, whipped cream, berries, powdered sugar

Instructions 

  • In a a large mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  • In a small bowl, whisk together sourdough discard, milk, melted butter, vanilla and eggs.
  • Slowly fold the wet ingredients into the dry ingredients. Mix together until smooth.
  • Set the batter aside as you prepare your griddle or pan.
  • Heat a griddle or pan over low-medium heat and lightly grease with butter.
  • Pour about 1/4 c. scoops of pancake batter onto the pan and spread out each scoop of batter gently into a circle.
  • Cook the pancakes on the first side until the underside is golden and bubbles begin to form on top. Flip the pancake with a spatula and continue to the cook until the pancake is golden brown.
  • Repeat the process with the remaining pancake batter.
  • Serve the pancakes warm with butter, maple syrup and desired pancake toppings. Enjoy!
